Gelato is the Italian word for ice cream, but it’s much more than a simple translation—it’s a distinct frozen dessert with unique characteristics.
What makes gelato special is its composition: it contains less cream and milk and less air (a process called overrun) than traditional ice cream. American ice cream can incorporate up to 50% air, making it light and fluffy, while gelato churns slowly, incorporating only about 20-35% air. This low-air content gives gelato its incredibly dense, rich, and velvety texture.
Furthermore, gelato is served at a slightly warmer temperature than ice cream (about 10∘F to 15∘F warmer), which keeps the flavorings from being masked by the cold, allowing the ingredients’ true, intense flavors to shine through on the palate. Learn more.
